Who else is in a recipe rut? I think it was after the fourth Facebook friend posted a request for recipe ideas that I got this idea: DoSayGive readers share their favorite go-to (easy!) weeknight recipes. And, to make it fun, I’m making it into a giveaway. One winner will receive a $50 gift card to the grocery store of her choice!

I like to cook, but ever since I started blogging/working 30+ hours a week my meal planning and preparation have really gone by the wayside. Like, y’all, I’m ashamed about my lack of good meals lately!

I know there are a ton of meal planning apps and services out there (I’ve tried many of them!) and a zillion food blogs and recipe sites but, frankly, I get overwhelmed by most of them. During the week, I just want good, healthy – but not super fancy – dinners [most of] my children will eat. I am looking for meals that take 30 minutes or less in the evening, can be prepped easily in advance or are crockpot/one-pot meals that require little tending to.

So, y’all, please help me out: share your go-to weeknight meal that everyone in your family loves in the comment section below. I have started a “DoSayGive Reader Cookbook” Pinterest Board just for these recipes and will pin the ones submitted so y’all can visit the board anytime to get fellow DoSayGive readers’ favorites. My friends have already shared their go-to weeknight meal (pork sambuca, a chicken and rice one pot meal, green chili lime tacos just to name a few!). Most are pinned on the DoSayGive Pinterest Board, but a few are listed below in case you aren’t on Pinterest.

  1. Cook ground beef with onions and garlic over med-high heat. Drain. Add beans, tomatoes, carrots, celery, rice, water, bouillon cubes, parsley, salt and pepper, basil leaves. Bring to a boil. Reduce heat and simmer 40 min covered. Add green beans. Continue simmering 10 minutes or until vegetables are tender. Makes three quarts.

  1. Turn on broiler. Heat olive oil in cast iron or regular skillet. Saute vegetables until soft.
  2. Broil buns open-faced for about 5 minutes.
  3. Heat cast iron griddle or skillet to medium. Salt and pepper meat (and add your favorite steak seasoning if so desired!) and place on skillet, continually separating and turning until just brown, about five minutes.
  4. Transfer to plate and top with cheese and mix around if desired. Add meat to hoagie bun and top with vegetables.
  5. Serve with your favorite condiment. You can also try this: 1 part mayo, 1 part spciy mustard, dash of soy sauce!

Slow Cooker Green Chili Lime Tacos with Zesty Cole Slaw

Instructions
  1. Place all but salsa into a crockpot on low heat for 6-8 hours (or overnight). Remove pork from liquid, discard or save liquid for another use. Shred pork into small pieces, return back to crockpot, and add salsa. Cook on low until ready to serve.  
Recipe Notes

Serve with Zesty Cole Slaw (Recipe Below!) or Rice and Beans.

Ingredients:

4 tablespoons rice wine vinegar

2 tablespoons fresh lime juice

1 tablespoon canola oil

1 tablespoon sugar

Bag of cole slaw vegetable/cabbage mix

1/4 cup fresh cilantro leaves

Salt and freshly ground black pepper

Whisk the rice wine vinegar, lime juice, canola oil, and sugar together in a small bowl.

  1. Thaw shrimp according to package directions and peel if needed; rinse and set aside Saute chopped onion and garlic in olive oil until limp (about 5 minutes) Add marinara sauce, wine and a little water if needed and let simmer for 10 minutes Add shrimp and bring to low boil, then reduce heat and let simmer for 15 minutes Remove from heat and add half and half, stirring well. Add basil, salt and pepper and let simmer about 5 more minutes. Serve over penne pasta

  1. Also I love your recipes here, my favorite is the Philly Cheese Steaks sandwiches~ I make these all the time.

  2. My favorite go to recipe is for cauliflower salad and its a big hit. I large cauliflower, 1 head lettuse, onion, jar of mayo, 2 cups shredded cheddar cheese and a pound of bacon. Layer it and make sure you put the mayo on top and top with the cheese. Let it sit in the fridge and then stir stir stir. Stirring is hard but if you layer it this way it takes so good

  3. I don’t have a link for my favorite so here it goes:
    Crockpot Meatballs + Beans
    1 package frozen meatballs of your choice
    2 cans cannelini beans, rinsed and drained
    2 cans Italians- seasoned diced tomatoes, undrained
    1 1/2 cups need broth
    Garlic powder, dried basil, dried rosemary, dried oregano, coarse black pepper – all to taste
    1 bag fresh baby spinach
    Cook your frozen meatballs according to the package directions (I like to do this part bc I think it brings out the flavor a little better, but you can also skip this and throw them in frozen) Throw everything but the spinach into the crockpot and cook on low for 6-8 hours. Add the spinach for the last 20 minutes or so, until wilted. We serve this on bowls and eat sigh spoons, it’s not quite a soup but more like a meatball stew. Add fresh grated Parmesan on top if you like. It’s great served with some good crusty bread! All of my kids will eat this! One just likes the meatballs out of it, but I’ll take it! My husband requests it once a week.

Just save the recipe cards for the meals that your family loves and buy the ingredients at the grocery store the next time.

  5. I love cooking this recipe almost weekly. Super easy and yummy for kids and parents!

    Pork Tenderloin With Asparagus
    1 pound pork tenderloin
    1 TBS Dijon mustard
    1 TBS light brown sugar
    1 tsp cumin
    1 tsp paprika
    ¼ tsp salt and then another 1/8 tsp salt
    1 bunch asparagus trimmed
    1 ½ tsp olive oil
    2 hard boiled eggs (this can be optional)

    Preheat oven to 400 degrees. Set pork in a baking dish and coat with the mustard. In a small bowl, mix the brown sugar, cumin, paprika, and ¼ tsp salt. Sprinkle the mixture over the pork. Roast pork about 35 minutes.

    Meanwhile, on a baking sheet toss the asparagus with olive oil and season with remaining 1/8 tsp salt. Roast 10 minutes. I placed the asparagus pan in the oven with the pork for the remaining 10 minutes.

    Slice the pork into ½ inch thick slices. Top the asparagus with chopped hard boiled egg.

    ** I double my portions on everything so I can have left overs. I used 2 1 pound tenderloins and then just doubled the spice mixture. Also, I squeezed a bit of honey on top of the Dijon mustard to add some sweetness prior to sprinkling the spice mixture on it.

  6. We love Salsa Verde Chicken! It’s so easy and only has two ingredients!
    Ingredients:
    1 1/2 lbs Boneless/skinless chicken breasts or thighs
    1 jar salsa verde (I use the Trader Joe’s brand)

    Directions:
    Place chicken in crockpot and pour salsa verde on top. Cook on low for 6 hrs or high for 4 hours.
    We like to eat it over rice or shred it for tacos!

  7. I don’t have a recipe for it, but I love pasta with homemade sauce. I make my sauce a little differently every time, but I usually make a lot so I can have it on hand for a quick, easy, but very tasty homemade dinner.

    Herb-Roasted Pork Tenderloin

    ¼ cup soy sauce
    ¼ cup Worcestershire sauce
    ¼ cup oil
    1 tsp thyme
    1 tsp marjoram
    1 tsp rubbed sage
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp ground ginger
    1 tsp salt
    1 tsp pepper
    1 ½ lb. pork tenderloin

    Stir together all ingredients, except the pork, in a shallow dish. Prick pork with a fork, place in large zip-lock bag, and pour marinade over it. Let it marinate 30 minutes at room temperature or for 2 hours in the refrigerator. Remove tenderloin and discard marinade. Bake on a roasting pan for 350 degrees for 40 minutes or until meat thermometer until registers 160 degrees.
