25th Anniversary Vegetable Soup
My friend Nicole shared this recipe five or so years ago. I think it came from a Houston junior league cookbook. I make it often because it’s hearty, has vegetables, and everyone in my family loves! Slice vegetables ahead of time for easy prep. Also a wonderful thing to bring to a new mom. And it looks so pretty you can serve at a winter supper club!

  1. Cook ground beef with onions and garlic over med-high heat. Drain. Add beans, tomatoes, carrots, celery, rice, water, bouillon cubes, parsley, salt and pepper, basil leaves. Bring to a boil. Reduce heat and simmer 40 min covered. Add green beans. Continue simmering 10 minutes or until vegetables are tender. Makes three quarts.
